30 sec Self Saucing Chocolate Pudding in a Mug

When my 6 year old son asks “what’s for dessert Mummy?” and we’ve just had a roast chicken dinner, who am I to just give him plain vanilla ice cream for dessert? Right? That would just be cruel. I had to satiate this poor little guy’s appetite with a nice tummy warming pudding but couldn’t be bothered mixing and baking a full size pudding. (And besides, I would just eat the bloomin’ lot!)

You’ve all seen the recipe for the chocolate cake in a mug? Well, this is an actual self saucing pudding. A quick search and I found a recipe for this 30 second pudding in a mug. I’m not sure if its a help or a hindrance. I certainly don’t need to know any 30 second recipes for rich chocolate gooeyness. But as a public service, I’m here to share it with you, my lovely readers. You’re welcome!

I used your regular sized coffee mug to allow for mixing and spluttering in the microwave. Its so, so easy. Just a matter of spooning in flour, cocoa, sugar and milk. Topping with a sprinkling of cocoa and brown sugar and then some hot water. Zap in the microwave for 30 seconds (although mine needed 40 seconds) and tip out into a bowl. The sauce is sitting at the bottom of the cup.

As you can see in the top photo, I served my son’s in a bowl with a few banana chips. Me? I couldn’t wait. I just spooned ice cream into the mug. Your dessert dilemma is sorted.

  • 1 heaped tablespoon self raising flour
  • 1 heaped tablespoon cocoa
  • 1 heaped tablespoon sugar
  • 1 and a half tablespoons milk

Topping:

  • 1/2 tablespoon cocoa
  • 1 tablespoon brown sugar
  • 1 tablespoon hot water
  1. Mix together self raising flour, cocoa, sugar and milk in a coffee mug (or other small microwave proof jug).
  2. Sprinkle on top extra cocoa and brown sugar and carefully pour on hot water.
  3. Cook in microwave for 30 seconds. (Mixture should be combined and cooked. If undissolved cocoa exists, zap for an extra 10 seconds.)
  4. Pour into a bowl or add ice cream or cream to the cup.

Slow Cooker Sticky Date Self Saucing Pudding

Nothing could be sweeter at the end of a meal on a cold winter’s night than a self saucing pudding and this Slow Cooker Sticky Date Self Saucing Pudding is such an easy recipe. You set and forget it in the slow cooker in the afternoon and it will be ready for after dinner.

I’ve done a self saucing pudding in the slow cooker before. It was a Pineapple & Coconut flavoured self saucing pudding which was delicious. Start by spraying the slow cooker with a little oil spray.

Soak a cup full of chopped dates in 1 cup of hot water.

Once the dates had softened, I blitzed the mixture. There was no way my fussy daughter was going to eat it if she saw the tiniest chunk of date. You don’t have to do this step if you prefer the dates chunky. Add the rest of the wet ingredients to this mixture.

Mix the dry ingredients and add the wet ingredients.

Add the mixed batter into the slow cooker and carefully pour over the hot water mixture. I usually pour over the back of a spoon so it disperses over the batter without dislodging it too much.

You will need a slow cooker that is larger than 1.5 litres (6 cup capacity) as you can see in the photo above. Alternatively, you could make individual puddings in cups and put in the slow cooker as I did for these Steamed Christmas Plum Puddings.

Once you eat all those bits off around the edge it’s cooked, you’ll see all that delicious caramel sauce pooled at the bottom of the slow cooker and it’s ready for serving. This one took about 2 hours on high but you could cook it for 4 hours on slow.

These types of self saucing puddings are best served straight away as the sauce tends to soak into the cake if left too long. Either way, they’re still delicious. You could always make up extra caramel sauce if you wanted to freezer leftovers or save it for the next night.

I prefer self saucing puddings with a scoop of ice cream but you could serve with cream or custard or just on it’s own.

Recipe

  • 1.5 cups self raising flour
  • 1/2 cup sugar
  • 1 cup dates, chopped
  • 1 tbs cinnamon
  • 1 cup hot water
  • 1 tsp bicarb soda
  • 1 tbs vinegar
  • 6 tbs oil (I used vegetable oil)

For sauce:

  • 1 cup hot water
  • 1/2 cup brown sugar
  • 1 tbs butter
  1. Put chopped dates in hot water and allow to soften.
  2. Once softened, blitz into a puree, if desired, otherwise leave as is if you prefer chunky dates in your pudding.
  3. Add vinegar and oil to softened date mixture.
  4. Mix together flour, sugar, cinnamon, bicarb soda and then add combined wet ingredients.
  5. Stir batter until well mixed.
  6. Pour into a larger slow cooker (at least 2 litre) that has been spray with a little oil spray.
  7. Combine extra hot water, brown sugar and butter and carefully pour over batter.
  8. Cook on high for 2 hours or low for 4 hours.

 

This recipe can be made in a suitable baking dish in the oven.

It can be made in individual serving sizes within cups inside the slow cooker. Ensure that there is sufficient water half way up the sides of the cups while cooking.

Slow Cooker Pineapple & Coconut Self Saucing Pudding

Did I mention how much I hate winter? Well, I do and it’s not even technically cold here in Queensland, the Sunshine State. It might get down to as low as 8 deg C (46 deg F) overnight (sometimes cooler) and the average temperature during the day is around 20 deg C (68 deg F). I don’t handle the cold too well. The only thing I like about winter is the food. Being a warm climate for about 9 months of the year, we don’t really ‘do’ soups, stews and puddings so for these couple of cold months I like to make the most of the more hearty recipes. Any kind of self saucing pudding is great and I had a fresh pineapple so Pineapple & Coconut Self Saucing Pudding it was.

This recipe is a good one to use as a standard for any flavour. Use whatever seasonal produce you have or add cocoa for a chocolate version. It produces a light spongy pudding.
The pineapples are full of juice and extra sweet at the moment. I have to stop myself from eating too much otherwise I suffer from ‘furry tongue’.
Damien’s mother gave me all of her appliances once she moved into the nursing home and other kitchen things and even though I do have a slow cooker, I love the size of this little one. It was just perfect for a self saucing pudding. You need to give it a light spray with oil to avoid sticking.
The method is pretty much the same as you would make for an oven or microwaved self saucing pudding.
You put the pudding mixture in the dish and carefully pour over the liquid.
I cooked this one on low for approximately 2 hours. It’s just a matter of inserting a skewer and checking that the top half of the pudding has set. You can see in the photo above all the bubbly sauce oozing up the sides of the dish.
Served with ice cream, this was really good. I’m going to remember doing them in the slow cooker from now on as I can just mix it, set it and leave it until dinner time and it keeps warm in the slow cooker. Hope you give this one a try.
Slow Cooker Pineapple & Coconut Self Saucing Pudding
  • 1 cup self raising flour
  • 1/2 cup sugar
  • 60 grams butter, melted
  • 1/2 cup milk
  • 1 cup fresh or canned pineapple, chopped
  • 1/2 cup coconut
  • 3 tablespoons golden syrup
  • 1 1/2 cups hot water
  • 25 grams butter, melted

 

  1. Combine flour, sugar, coconut.
  2. Add melted butter and milk and gently fold through flour.
  3. Add pineapple.
  4. Place in a greased slow cooker (or dish for baking in the oven or microwave).
  5. Combine syrup, hot water and extra 25 grams melted butter.
  6. Gently pour liquid over pudding batter.
  7. Cook in slow cooker on slow for approximately 2 hours.
