Too many clothes but can't find anything to wear?

Have you ever asked yourself that before? Do you have too many clothes but can never find anything to wear? (*putting my hand up*) That was until I discovered a capsule wardrobe. I heard of a capsule wardrobe years ago and thought it would be a good idea but just never got around to doing it. That was until a really good friend of mine put pen to paper and wrote Creating a Capsule Wardrobe: A Guide for Real Women with Real Budgets.

Written by my good friend Claire Collins and Ellen Bradshaw, “Creating a Capsule Wardrobe: A Guide for Real Women with Real Budgets” will take you through the process of creating a capsule wardrobe for real women like us with real budgets.

I was lucky enough to grab a copy of Claire and Ellen’s book, hot off the press and decided it was time. Time to fix the problem of having too many clothes that didn’t coordinate well with other pieces in my wardrobe and still, I’d stand there for ages trying to decide on something to wear. Following the instructions in the book was so easy and so rewarding.

I think I went from having over 50 pieces of clothing and reduced it to 20, including shoes, and according to the handy grid in the book, which helps you calculate just how many different outfits you can achieve, I now have 256 different outfits to wear.

A capsule wardrobe could be used all year round or you could divide it up into seasons, which is what I did. It’s just coming into cooler weather here where I am. Because I don’t live in a really cold climate, I was able to keep most of my summer clothes, bring out some of my winter jumpers and jackets and then all I had to buy was 1 or 2 more pieces to compliment what I already had to have a fully coordinated, interchangeable wardrobe of clothes.

My Colour Scheme

I decided to stick to a black, navy, red and white colour scheme because that’s what I seemed to have a lot of. I had to decide on a uniform, as Claire and Ellen explain in their book. There’s no point creating a wardrobe full of elaborate gowns or party dresses if that’s not what I need for my lifestyle.

As a busy Mum, who’s running from home to school and back again, running errands, catching up with friends or the occasional business meeting thrown in, I decided the look I should go for was a casual, resort style.  I do love wearing a sneaker so can incorporate a few casual looks with the items of clothing I’ve decided on.

What I love best about this book is that I don’t need to buy a complete new wardrobe of clothes. It explains in precise detail just how to decide what will fit in with your lifestyle, what to keep, what to get rid of and just how easy it is to create all these different outfits with only a few pieces of clothing.

We’re real women who are making ends meet so we don’t just walk into the designer boutiques to buy those one off pieces nor do we have the budget, or lifestyle for that matter.

I also found that this process has boosted my self esteem immensely. Instead of going for my old favourite tshirt to wear around the house and think “oh, I need to duck down to the store”, I make sure I’m dressed for success every single day.

Spring cleaning was huge when I was a young girl. I can remember many Saturday mornings, as a young girl with my 2 sisters, washing walls, polishing timber internal doors, removing every insect screen from the house and scrubbing them as well as getting into every ‘nook and cranny’ of our home to clean it, every Spring.

It’s a habit I continued well into my adult life but, I must admit, life (or should I say my children) kind of got in the way and I haven’t done a really good Spring clean in a few years.

I’m talking washing curtains, dusting and washing walls, cleaning sliding door and window tracks and all the really big household cleaning jobs you don’t do on a regular basis.

The Spring Cleaning Schedule

Below is the Spring Cleaning Schedule I’ve been using for years. It doesn’t look like there’s much to do on there or it might seem like there’s quite a lot but if you break it down to what you can get done in a day or a weekend, then it won’t be so overwhelming. If you work full-time, of course you’re not going to get a lot done every day. Even if you do the dry, dusting jobs for 20 minutes per day, after work (set a timer), you’ll be making great head way into getting the job done. Don’t worry if you can’t get it all done in September. Just keep at it and once complete, you’ll feel so much better about the home you’re in. Tick it off the schedule as you go.

Reducing Chemicals

I was introduced to Norwex products a few years ago and I fell in love straight away. I’ve always tried to use a minimum of chemicals when it comes to cleaning products used in the home. One, because of the damage to the environment and our own personal health plus the cost of buying chemical cleaners. I hardly ever visit the cleaning aisle in the supermarket. There’s really no need to. A simple household, all purpose cleaner and water is all you need. It’s all made easier with the range of Norwex cleaning cloths which are a superior microfibre cloth which does all the cleaning for you. Check out the video clip below on how effective the Norwex microfibre cloths are.

You don’t need to scrub really hard. The superior microfibre is ultra-thick and absorbent to pick-up and hold more dust, dirt and debris than other cleaning cloths. It holds several times its weight in water and is made of more than 10 million feet of microfiber for more effective cleaning power. With just water you can clean your entire home.

Norwex do have a range of chemical-free products to help in hard to clean areas like the oven, built up soap scum in the shower and stained toilet bowls, for example.

Cleaning Products

Like mentioned previously, you don’t really need anything more than water to do all your cleaning. If you can adapt to this way of cleaning all the time you’ll save so much money buying chemical cleaners plus you’ll be saving the environment and the health of your family.

Let’s face it, as good as cleaning with just water is, there are some areas of the home that need that little bit of help. One area is the oven. Norwex make a non toxic oven cleaning product which is just amazing. Same goes for built up soap scum and stains in the toilet bowl. Norwex have a product for just about every hard to clean surface but promote just the use of water with their revolutionary microfibre cloths and other cleaning tools.

These are the recipes I use for making my general purpose cleaning products. There are many recipes on the internet. If I do want to add a scent to the area I’m cleaning, I’ll use a few drops lavender or eucalyptus essential oil.

Chunky Monkey Bars

CHUNKY-MONKEY-BARS-MAIN What are Chunky Monkey Bars you ask? They’re my latest creation using the new look, new taste and improved performance Nestlé  Baker’s Choice range. A combination of a dark chocolate infused crunchy biscuit base, topped with a fudge-like banana and white chocolate centre dotted with dark chocolate chunks and topped with the smoothest of dark chocolate ganache. A really indulgent treat but not overly sweet. domesblissity chunky monkey bars Nestlé Bakers’ Choice set me the #BakeItYours Challenge and I accepted. You don’t have to ask me twice to bake something with chocolate. I used the dark chocolate melts, dark chocolate chunks, white chocolate melts and delectably rich 100% sustainably sourced cocoa. All chocolate products have a real chocolate flavour not like that cheap chocolate flavour that you sometimes get with baking chocolate. The chocolate melt products melt really well and the chunks and chocolate chips hold their shape when baked in cookies for example.

A Dark Chocolate Biscuit Base

domesblissity chunky monkey bars I’m a ‘melt and mix’ baker. No having to worry about creaming butter and sugar together for the biscuit base. Melt together the Nestlé Dark Chocolate Melts and butter in the microwave. Depending on the wattage of your microwave, I always advise to cook at 30 second bursts to avoid chocolate ‘siezing’. I know that I can melt my chocolate in the microwave for 1 minute and I’ve never had a problem. Mix in the sugar until dissolved. Allow the mixture to cool slightly and add a beaten egg. 20160729_110054 I don’t worry about sifting either. It’s just one less you have to do when you’re a busy Mum. Add the flour and the Nestlé 100% Cocoa. Mix well until a firm dough is formed. 20160729_110355 Check out that glossy dark biscuit base. So full of chocolate-y richness. Remember, it doesn’t have too much sugar in it and by using dark chocolate, there is less sugar in that too. Press the biscuit dough into a 20x25cm slice tin and bake for approximately 15 minutes.

A Fudge-like Banana & White Chocolate Centre with Dark Choc Chunks

20160729_110817 Next step is to make the middle banana layer. Forget banana bread. This will be my new ‘go to’ recipe when I need to use up ripe bananas. Just mash together 2 medium sized bananas and set aside. 20160729_111032 Melt 3/4 cup of Nestlé White Chocolate Melts in the microwave (at 30 second bursts). Remember that white chocolate is made from cocoa butter so has a different ‘melting point’ to dark or milk chocolate so extra care should be taken when melting it so it doesn’t sieze.  domesblissity chunky monkey bars Add 1/2 cup of melted butter to the melted white chocolate and mix well. Allow mixture to cool slightly and mix in 1 beaten egg, 1/2 cup of sugar and 1 teaspoon of vanilla extract. Add the mashed banana. 20160729_111606 Add in 1 3/4 cups of plain flour and a pinch of salt. 20160729_111753 Combine until a smooth batter is formed. (Note to self: Don’t taste test or else you will eat the lot before it’s baked.) 20160729_111828 And this is where the ‘chunky’ part comes into it. Add 1/2 cup (or a big handful) of Nestlé Dark Chocolate Chunks to the batter and pour

over the cooked biscuit base. 20160729_112124 Smooth over and bake for approximately 30 minutes.  20160729_121947 It will be a fudge like consistency like a gooey browney. If you like it a bit firmer, cook for a further 10 minutes. The chocolate chunks hold their shape really well when baked. They’re perfect for Chocolate Chunk Cookies or Muffins. Topped with Dark Chocolate Ganache

20160729_142418 Contrary to popular belief, you don’t need cream to make a nice chocolate ganache. I used butter mixed with the dark chocolate melts to make a rich but not sweet, smooth delectable topping for these Chunky Monkey Bars. I’ve even made ganache using Greek yoghurt and it turned out wonderfully. To make the ganache, melt together 125gms butter and 125gms Nestlé Dark Chocolate Melts and combine until smooth. (Remembering to microwave at 30 second bursts.) You can also melt chocolate the traditional way over a pot of boiling water in a ‘bain-marie’, that is, in a dish placed over the pot of boiling water but when you’re in a hurry, microwaving works just fine for me. 20160730_163823 Pour the ganache over the cooled bars and put in the fridge until the ganache has set (approximately an hour or so). Slice and serve. 20160730_163914 Just like every other combination with chocolate, banana works perfectly with dark chocolate. You could make these bars without the biscuit base and it’d work out just fine but if you’re looking for something a little extra special for a morning tea or cuppa with the girls, these bars will impress. My kids are devouring them. I’ve put them in the freezer so I don’t eat them my kids won’t eat them all at once and they freeze really well. 20160730_163823 You could also choose to omit the dark chocolate chunks from the middle banana layer but then they wouldn’t be ‘Chunky’ Monkey Bars would they? Hope you give them a try. I’ve got a couple more chocolate recipes up my sleeve using the Nestlé Bakers’ Choice range so stay tuned.

Recipe

Chunky Monkey Bars

A decadent but not too sweet dark chocolate and banana bar with a dark chocolate base, fudge like banana and white chocolate centre which has been filled with dark chocolate chunks and topped with dark chocolate ganache.

Cook Time 45 minutes
Total Time 1 hour 30 minutes

Ingredients

Dark Chocolate Base

  • 80 gm dark chocolate melts
  • 80 gm butter
  • 1/3 cup sugar
  • 1 egg beaten
  • 1 cup plain flour
  • 3 tablespoons 100% cocoa

Banana & Chocolate Chunk Centre

  • 3/4 cup white chocolate melts
  • 1/2 cup butter
  • 1 egg beaten
  • 1/2 cup sugar
  • 2 medium ripe bananas mashed
  • 1.3/4 cups plain flour
  • pinch salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chunks

Dark Chocolate Ganache

  • 125 gm butter
  • 125 gm dark chocolate melts

Instructions

For the base

  1. Place dark chocolate melts and butter in a microwave proof dish and microwave until melted. (Melt at 30 second bursts.)
  2. Allow mixture to cool slightly then add beaten egg, sugar and mix well.
  3. Mix in flour and cocoa and combine well.
  4. Press biscuit dough into a 20x25cm slice baking pan and bake for approximately 15 minutes in a 180 deg C oven.

For the Banana & Choc Chunk Centre

  1. Place white chocolate melts in a microwave proof dish and microwave until melted. (Melt at 30 second bursts.)
  2. Add melted butter to melted white chocolate.
  3. Allow to cool slightly and add beaten egg.
  4. Mix in sugar and vanilla extract.
  5. Fold in mashed banana.
  6. Mix in flour and salt and add dark chocolate chunks.
  7. Pour over baked biscuit base and bake for 30 minutes at 180 deg C. (For a more firm banana layer, bake for a further 10 minutes.)
  8. Allow to cool completely.

For Dark Chocolate Ganache

  1. Melt together dark chocolate melts and butter.
  2. Pour over cooled sliced and place in fridge to set. (Approximately an hour or more.)
  3. Slice to serve.

Recipe Notes

You can slice it into bite sized pieces therefore getting more than 24 pieces from this recipe.
This recipe freezes well.

Family Meat Pie + Giveaway


It's hard to identify what might be Australia's national dish these days as we live in such a multicultural nation but growing up in Australia there was nothing more Aussie or traditional than a meat pie (or a 'dog's eye' as it's also known).  One of my most favourite meals as a child was Mum's Family Meat Pie. She'd do a really short pastry using lard or dripping of some kind with a chunky meat filling or use the meat from the Sunday roast. I have to admit not making one for absolute ages, rather opting for sweet pies but a special occasion called for a special dish from my childhood. Pyrex are celebrating their 100th anniversary in 2015 and what better way to showcase one of my most used Pyrex dishes then with a Family Meat Pie using my Pyrex pie plate.

  

I thought I'd try and find a recipe from 100 years ago for the occasion so an elderly friend of mine lent me her mother's copy of The Commonsense Cookery which celebrated it's centenary anniversary last year. As you can see from the recipes above, that is Sheep's Head Fricassee, Jellied Tongues or even how to throw a 'Hobo Party' I don't think I wanted to go that far back. Although pastry has been used for hundreds of years, of various kinds with many different kinds of fillings, so we can't take full credit for it, we have definitely made it a staple in our every day life as Australians. Nearly every suburb has a bakery that sells meat pies and what's watching a football game at the stadium without munching on a meat pie.


The cheaper cut of meat the better for a chunky meat pie filling. You could use ground meat but I love the tenderness of a chunky meat pie filling that has been slow cooked all day like I did with the chuck steak I picked up.


Cut it into chunks and dredge in a ziplock bag in seasoned plain flour.


Brown in a little olive oil until golden and then add to slow cooker with some softened carrots, celery and onion.


Add a cup full of stock, preferably beef stock (which I didn't have so used vegetable stock) and leave it to slow cook away.


My secret to a dark rich gravy for the meat pie? A tablespoon of our famous Aussie Vegemite!


Next thing to do is prepare the shortcrust pastry for the bottom crust of the pie. Lard's not something you're likely to find in my fridge so I used butter. One thing I remember my Mum telling me years ago was to have all your ingredients (even your utensils) as cold as possible when making pastry. Pastry is definitely something that is better made in Queensland's winters rather than summer because of this very thing.


Rub the butter into the flour with your fingertips until it resembles fine crumbs.


After gradually adding the liquid, bring the dough together until it forms a ball and set in the fridge for at least 30 minutes to avoid shrinkage.


Spray your pie plate with a little oil and roll out the pastry to fit the plate.


Top with baking paper and fill with pastry weights or as I do, dried lentils. (These are my baking lentils I use for precooking pastry. Not sure how old they are.)


Cook the pastry for about 10 minutes. Don't worry about uneven edges on the pie plate. The top layer of pastry will stick to it. Fill with the cooled meat filling.


I didn't make my own puff pastry top rather opting for frozen pastry. Apply a little egg wash around the edge of baked 'bottom' pastry and then again on top of the puff pastry top for a golden finish when baked. (I decorated the top of the pie with a few leaves but you don't have to do that. Just poke a hole in the top of the pie top to allow any heat from the filling to escape.)


 Cook until the pastry top is golden and puffed.


The excess gravy just oozes out. Even looking at the photo my mouth is watering. It really was delicious for something so simple. Our ancestors really did know how to make a tasty dish with only the simplest of ingredients. No wonder Pyrex dishes were invented 100 years ago to accommodate all these lovely recipes.


A slice of pie served with mashed potato and vegetables and the most important ingredient, a good squirt of tomato sauce (ketchup) and that's your Aussie Family Meat Pie.

Family Meat Pie

Filling:

  • 500gm chuck steak, cubed
  • 2 tablespoons plain flour
  • salt and pepper
  • oil for frying
  • 1 carrot, diced
  • 1 celery, diced
  • 1 onion, diced
  • 1 cup beef stock
  • 1 tablespoon Vegemite, optional
  • 1 egg, beaten
  • 1 tablespoon milk

Shortcrust Pastry:

  • 2 1/4 cups plain flour
  • 1/2 tsp salt
  • 200gm cold butter, cubed
  • 1/4 cup cold water, approx


  1. Dredge cubed steak in seasoned plain flour and fry until sealed and golden. Remove from pan.
  2. Add a little more oil and fry off carrot, celery and onion until soft.
  3. Add fried meat and vegetables to a slow cooker with 1 cup of beef stock and Vegemite and cook for 4 hours on high or 8 hours on slow. (Alternatively, you could cook the beef pie filling in a pan on the stove top or a dish in the oven.)
  4. Once cooked, allow to cool before adding to pie filling.
  5. For the pastry, add salt to flour and add cubed butter.
  6. Crumble butter into flour using your finger tips, lifting flour up as you go to allow more air into the mixture. Once all butter has been combined into flour, it should resemble fine breadcrumbs.
  7. Slow add cold water a little at a time until a firm ball is formed.
  8. Cover pastry in cling film and put in the fridge for approximately 30 minutes to avoid shrinkage when baking.
  9. Remove pastry from fridge and roll into between 2 sheets of baking paper until large until to fit pie dish.
  10. Cover with baking paper and fill with pastry weights or dried beans/lentils.
  11. Bake for approximately 10 minutes.
  12. Once baked, remove baking paper and pastry weights/lentils.
  13. Add beef filling to pastry and brush beaten egg/milk mixture to edge of pastry base and top with a sheet of frozen puff pastry or you could top with more homemade shortcrust pastry. In that case, double the pastry recipe above.
  14. Cut a small hole in the top pastry layer to allow steam to escape while pie is cooking. Decorate pie if desired.
  15. Brush pie top with beaten egg wash and bake until golden brown. Serve with vegetables (and tomato sauce).
