Weet-bix Breakfast Cookies

Do you know where I get a lot of my recipe inspiration from? The supermarket. There are so many new ‘ready made’ products coming on the market and I can’t believe that people actually buy them when they are so easy to make at home with your basic pantry ingredients. These sort of things have been on the market for a while but I nearly ‘flipped my lid’ when I saw them. Breakfast biscuits (cookies)! Like what? Cookies for breakfast? Now that’s something I would really like and I’m sure my kids would too. (In fact I think their father buys them but I wouldn’t buy them in a ‘pink fit’.) The latest company to now make cookies for breakfast, believe it or not, is Wee-tbix. Weet-bix are already a biscuit if I’m not mistaken. We used to have them as a kid, smothered with butter and jam. Oh well. It gave me inspiration to make them and they were a hit with the kids.


You can pretty much add anything to the base recipe. Things like chocolate chips, dried fruit, nuts or even other leftover cereal (how ironic).

Once you’ve got the dry ingredients mixed together, it’s just a matter of mixing the wet ingredients

together and combining.

I used my small ice cream scoop to place small amounts of mixture onto the baking pan and I was expecting them to spread a bit more than they did. Next time I’ll flatten them out a bit. These were a real hit with the kids for breakfast, lunch boxes and afternoon tea but I don’t think, personally, that I can go past a good old bowl of Weet-bix and milk (for breakfast, lunch or dinner).

Weet-bix Breakfast Cookies
(based on the recipe from the Sanitarium website)

  • 4 Weet-Bix, crushed 
  • 2/3 cup rolled oats 
  • ¾ cup plain flour 
  • 100g brown sugar 
  • 3 tablespoons butter 
  • 2 tablespoons golden syrup 
  • 1 teaspoon bicarbonate of soda 
  • ¼ cup boiling water
  1. Mix together Weet-Bix, rolled oats, flour, and sugar until well combined. 
  2. Place butter and golden syrup in a small saucepan and heat gently until melted. 
  3. Mix bicarbonate of soda and water together then pour into butter mixture. 
  4. Add to dry ingredients and stir to combine. 
  5. Place tablespoons of mixture onto baking trays lined with baking paper. 
  6. Bake at 160°C for 15-20 minutes. 
  7. Cool on trays before serving.
Note:  Add things like chocolate chips, chopped dried fruit or nuts to the dry mixture before mixing with the melted butter mixture.

{Weetbix} Chocolate Truffles

Here in Australia, we have a Christmas tradition where we make what’s called “Rum Balls” (they look like those in the picture above). If you look at an old recipe for Rum Balls you’ll find that they are made with crushed Weetbix (*), cocoa, coconut, condensed milk, mixed fruit and rum. Usually lots of rum. You’ll find them on every Christmas food table in just about every house in Australia or put in an old glass coffee jar, wrapped in cellophane for a friend or neighbour as a gift. These chocolate truffles I make are exactly the same but with NO rum and are an excellent way to use up Weetbix.

These make an excellent lunch box or after school treat for the kids (without the rum of course) and are really easy for the kids to make. I can remember helping Mum make the rum balls every year. I was never a fan of rum all my life but somehow we all used eat those rum soaked treats even as children, I think? Maybe I was drunk on the fumes.  I used the 99% fat free condensed milk so even I  can enjoy them. (Who am I kidding? I’ll eat them full of fat or fat free!)

Once the ingredients are mixed together, I like to leave it sit for a while so the Weetbix crumbs soak up all the moisture. It can get a bit messy when you’re rolling the mixture but its a lot of fun and you make heaps in next to no time.

Once rolled into a ball, roll in more coconut and your done. Store in the fridge until required. (These might just go on the teacher’s present list for Christmas this year, with the rum. They’ll probably need it after dealing with my two children all year!)

{Weetbix} Chocolate Truffles

  • 8 Weetbix, crushed
  • 2 tbs cocoa
  • 1/2 cup coconut
  • 1 x 395gm tin condensed milk
  • 1 cup dried fruit of any kind (optional – I added a handful of tiny chocolate chips)
  1. Add all ingredients into a mixing bowl and combine well. Allow to sit for at least 15 minutes for moisture to be soaked up by condensed milk.
  2. Take small bits of mixture and roll into a ball.
  3. Roll into coconut.
  4. Store in fridge until required.
  5. Makes approx 20 balls.

(*) In the USA, Wheaties or Bran Flakes are a suitable substitute.

18 ways to use up Weetbix/Wheaties

Weetbix are a popular breakfast cereal here in Australia and if you don’t use them up straight away, they tend to sit back in the pantry, taking up valuable space. They always leave a lot of crumbs in the bottom of the pack which are good used up in baking.
 Weetbix are an Aussie breakfast favourite that most of us grew up on. Its one of the first solids you give babies here in Australia. My son absolutely loves them, as do I. Trouble is, me with my Mummy brain I forget that I’ve already got a box at home and buy another. At last count I have one and half of the BIG family size boxes in the pantry. We’d be eating Weetbix for breakfast for the next two years if I don’t come up with some other ways to use them up. Here’s a few I do regularly plus a few others I’m going to try.
  • hot or cold with honey, sugar, fresh fruit and milk for breakfast (or any time of the day really)
  • buttered with Vegemite or jam as a snack
  • crushed and used to thicken soups, stews, sausage rolls, sweet or savoury pies, rissoles (hamburgers), meatballs, fish cakes
  • use crumbs for cheesecake base, no bake slices
