Easy Microwave Chocolate Fudge

There’s nothing quite like homemade fudge for a sweet treat and as much as I love traditional fudge made with sugar, cocoa and boiled on the stove top, this easy microwave chocolate fudge is quick, rich and hits the spot when you’re in a hurry.

Domesblissity.com: Easy Microwave chocolate Fudge

I don’t ever buy special ingredients when making sweet treats or baking but rather use what I have. I nearly always have chocolate melts or a block of chocolate in my pantry to add to baking. I always have a tin of condensed milk in my pantry which can be used for so many things and with the addition of a small bag of marshmallows that I had used for something else, this fudge came out really good.

Domesblissity.com: Easy Microwave Chocolate Fudge

First start by emptying the can of condensed milk, 60gm butter (approx 3 tablespoons) and a block of your favourite chocolate, broken up, into a microwave safe mixing bowl.

All microwaves are different so test by melting ingredients together, on high, in 30 second increments. Once chocolate has melted, stir ingredients well to combine.

Line a 9 inch square baking pan with baking paper. I sprinkled the marshmallows onto the bottom of the pan. If I would’ve added them to the melted chocolate fudge mixture they would’ve melted. Pour melted fudge mixture into pan and allow to set in fridge for at least 2 hours.

This batch of fudge was destined to be a ‘Rocky Road’ version with the addition of peanuts but because my daughter doesn’t eat peanuts, I didn’t add them. There are so many variations to this basic recipe you could try. You could try flavoured chocolate, white chocolate, add chopped cookies for a “Cookies & Cream” fudge, nuts, dried fruit etc. Really anything you have in your pantry that needs using up.

Recipe

  • 200gm block of chocolate or chocolate buttons
  • 1 can condensed milk
  • 60gm (or 3 tablespoons) butter
  1. Line 9 inch baking pan with baking pan.
  2. Combine all ingredients in a microwave save bowl.
  3. Microwave on high in 30 second increments until chocolate is melted.
  4. Mix melted ingredients together and pour into lined baking pan.
  5. Allow to set in the fridge for approximately 2 hours.

Variations:

  • Use white chocolate
  • Use flavoured chocolate, eg peppermint, rum’n’raisin, caramel, etc
  • Add nuts and marshmallow for ‘Rocky Road’
  • Add nuts of any kind
  • Add dried fruit
  • Add chopped cookies
  • Add coconut
  • Top fudge with ingredients you used in fudge, eg cookie crumbs for a Cookies & Cream fudge
  • Add chopped candy

Almond Roca (Toffee Almond) Fudge

Almond Roca(Toffee Almond)Fudge

The poor teachers at my children’s school were left in charge of my 9 year old son when he went on camp just recently and besides probably needing a stiff drink by the time they got back, I wanted to give them a little something for ‘looking after’ my son. Fudge is always an easy and delicious thing to make as a gift so I decided to turn the usual ingredients for Caramel Fudge into something a little special with this Almond Roca Toffee Almond Fudge.

Domesblissity Almond Roca Toffee Almond Fudge

If you’ve never tried Almond Roca before, it’s a crunchy toffee candy filled with roasted almonds and then smothered in chocolate and coated in more finely chopped roasted almonds. I didn’t want to bother with boiling sugar so made my easy caramel fudge recipe but took both the butter and the caramelising of the fudge mixture that bit further to get a darker more toffee flavoured fudge and it worked beautiful. The same taste as Almond Roca but with a fudge texture.

20160724_112502

Get your pan ready by lining with baking paper.

20160724_113040

Get all your ingredients ready. For the fudge, I used a can of condensed milk, brown sugar, white chocolate melts, butter and finely chopped roasted almonds.

20160724_113330

Melt the butter and brown sugar but take the butter a little further until it is a golden brown colour.

20160724_114511

Add the condensed milk and keep stirring until it has gone a dark brown colour. Don’t leave the stove for a second or else it will burn. It will need to be stirred continuously for about 10 minutes. You’ll know when it’s ready if you pop a bit of the mixture into a glass of water and it forms a ball. Be sure to get around all the edges of the saucepan or else parts will be darker than others. Add the white chocolate melts and chopped roasted almonds.

20160724_114719

Pour into the baking pan lined with paper and allow to set. This should take an hour or so in the fridge. Leave overnight to be sure (but seriously, who can wait that long?)

20160724_123129

Melt some milk or dark chocolate in the microwave and chop some more roasted almonds.

20160724_123359

Pour the chocolate on top and sprinkle over the almonds. Press the almonds into the melted chocolate to they stay put. Allow for the chocolate to set.

20160724_123405

And there you have it. This takes an ordinary caramel fudge to a new level. You could try it with any kind of nut like macadamia, pecan, walnuts, brazil or even peanuts.

I wrapped a couple pieces of fudge in cling film and popped them into these really cute pillow boxes. There are so many free printables for pillow boxes online but I found this one I really liked and you can download it for free here. The teachers were very happy with their little gift and assured me that my son was very well behaved (except for the time when he first got there and he was extremely home sick and ran and sat in a garden bed and the other time he decided he didn’t want to be any part of a game where his face was squirted with water).

Bounty (or Almond Joy) Fudge

bounty-fudge-1

You know, I’m my own worst enemy when it comes to stumbling upon good, easy, cheap, frugal etc etc recipes. They soon become my ‘go to’ recipes and my mind is always ticking about how I can change the flavours. Doesn’t everyone think about food constantly like I do? This fudge recipe came about when I was dreaming thinking about candy bars and I wondered how I could transform one of my favourite bars into my microwave fudge recipe and it worked. I was pleased how well it worked out.

20151202_131657

In my Best (& Easiest) Sweet Recipes for Gift Giving ebook, I have two fudge recipes. There’s the two ingredient fudge you can make from a couple store bought ingredients and a good standby but I much prefer this recipe made with basic pantry ingredients that just about everyone should have on hand. There’s no stirring on the stove, no special ingredients. Just whack it in the microwave to melt the butter and/or chocolate.

20151202_131936

I would go on to say this is the best ever fudge recipe I’ve ever come across and it will be my standard for all different flavour combinations.

20151202_132055

If you don’t know what “Bounty” or “Almond Joy” candy bars are, they are delicious creamy coconut centred bars, smothered in chocolate with the Almond Joy bar having an additional whole almond. I didn’t add the almond in this recipe but you could quite easily add one whole almond every inch, approximately where you’d be cutting the fudge, or crush them and sprinkle on top of the chocolate.

20151202_132919

As usual, I was stretched for time and I swear, this fudge was made in about 10 minutes flat. It doesn’t take long to set either so early taste testing was possible. I don’t want to serve my family something that was inedible, right?

bounty-fudge-prep

There was no time for fussing so I just pressed the coconut layer onto the chocolate fudge layer, smothered it in chocolate and it was done.

20151202_163225

The result was amazing. I reckon it cost less than $5 to make and there was heaps of it.

20151202_163159

This is yet another recipe to put in the ‘vault’ as my go to fudge recipe. I can’t wait to try making it into other flavours. Did I say that? Just don’t let the scales know!

2 ingredient Caramel Fudge

If you absolutely, positively have to get a last minute homemade gift ready in a jiffy, you can’t go past this 2 ingredient caramel fudge. I actually bought the ingredients months ago because I’d wondered if it would work.

2 Ingredient Caramel Fudge www.domesblissity.com

When it came down to the crunch on the weekend before Christmas when I had to get a few homemade Christmas gifts organised, I gave it a go and it worked. It isn’t quite like a firm, hard fudge but more like a soft caramel. I would suggest spreading it out in a larger dish to set better.

2 ingredient caramel fudge www.domesblissity.com

Take a can of already prepared caramel top’n’fill and a 375gm packet of white chocolate melts. Pop them in a microwave proof bowl and blast for 1 minute then 30 second increments until all melted. Mix well and pour into a heatproof dish and pop in the fridge. Cut into squares and enjoy.

1 Minute Microwave Hot Choc Fudge Peanut Sauce

Okay, look away now if you’re on a diet or avoiding sugar.

I’ve been making this sauce for a few years now (probably more times than I should have) especially when I have a little bit of cream that needs using up. Its either this chocolate fudge sauce or I use the cream in a pasta dish. Either way, I probably shouldn’t.

CHOCOLATE PEANUT BUTTER FUDGE SUNDAE
Nigella Lawson’s Chocolate Peanut Butter Fudge Sundae

This is a sauce based on Nigella’s Chocolate Peanut Butter Fudge Sundae Recipe but instead of worrying about cooking it over the stove top in a saucepan, I use a microwave suitable dish and cook it for 1 minute. Yes, that’s all folks. In one minute (60 seconds) you can have this delicious, rich, thick, chocolate-y, gooey, fudge-y sauce. You can pour it over ice cream, as I have done in this Banana Split OR, if you’re really naughty, you can put in the fridge to harden and its the perfect recipe for truffles. Take small pieces of mixture, roll into a ball and roll in cocoa, icing sugar, crushed nuts or coconut. You can also omit the peanut butter and add nutella with a sprinkling of chocolate hazelnuts. You could also allow to set slightly and ice a cake with it.

Whichever way you have this, enjoy, in moderation of course. (Do as I say, not as I do!)

1 Minute Microwave Hot Choc Fudge Peanut Sauce

  • equal quantities of cream, chocolate and peanut butter
  • 2 tbs of golden syrup (based on approx 100ml each of above ingredients – use more or less based on above quanitities)
  1. Put all ingredients into a microwave safe jug and heat for 1 minute.
  2. Stir until ingredients have combined.
  3. Use as required.

Easy 2 ingredient chocolate fudge

Easy 2 Ingredient chocolate fudge www.domesblissity.com

WARNING: Do not read this blog post if you don’t want to find the easiest, most decadent fudge to make with only 2 ingredients! It’s not my idea, so don’t blame me! I will not be responsible for excess calorie intake or over indulgence.

I pinned this recipe I saw on Pinterest for 2 ingredient fudge a while ago. I thought hmmpf, that looks easy enough but what on earth would it taste like? and didn’t think about it anymore (like many things I pin from Pinterest). My sister’s birthday was last week and I usually like to make a batch of sweets for her. Something like fudge, caramel or brittle. I had an ‘a-ha’ moment and I remembered the fudge recipe I pinned. I was, after all, running out of time as the week was drawing to an end and wanted to get this stuff made as soon as possible.

Easy 2 Ingredient Chocolate Fudge www.domesblissity.com

Two words people: frosting and chocolate! That’s it! Sorry if you’ve heard about it before but I couldn’t believe how easy this was. No worrying about melting chocolate and sugar or condensed milk and stirring, stirring, stirring (even though there’s nothing wrong with that – I quite like the taste of that fudge). But if you want to put together a quick gift in next to no time, and your friends will think you’ve been slaving away over a hot stove, try this one. Yeah, okay, its sickly sweet and gooey and fudgey and all those wonderful things, but all in moderation, hey?

Melt 450gm of milk chocolate buttons (use white chocolate if you’re using the white ready made frosting).

Easy 2 Ingredient Chocolate Fudge www.domesblissity.com

Mix in the entire contents of a can of chocolate frosting and mix well. Work quickly as the room temperature of the frosting will begin to set the melted chocolate.

Easy 2 Ingredient chocolate fudge www.domesblissity.com

Add nuts (I added walnuts to both the mixture and on top), dried fruit, marshmallows or anything else you’d like and spread in a slice pan (20cm x 18cm) or similar. Allow to set in the fridge.

Cut into squares and try not to eat too much before you pack into a gift box.

My sister didn’t want to know what was in it but she said it was very rich and very nice.

As I said, don’t blame me. It’s not my fault. Blame Shelly from Cookies & Cups. This is where I pinned the original idea from. Obviously, in the US they have strawberry flavoured cans of frosting and she mixed white chocolate with hers. Doesn’t it look gorgeous? Shelly, I’m not sure whether to love you or loathe you? At least I won’t be stuck for a last minute gift idea again as long as I’ve got a can of Mrs C nearby.?
