Grilled Chicken, Bacon & Avocado Burger

Week day lunches, while the kids are at school, are usually a non-event. It’s either some kind of leftovers from the night before, a salad or crackers with cheese and tomato but if I’ve got all the makings for a burger, I’ll treat myself. On this particular day I had avocados, chicken breast, bacon plus the salad ingredients and hamburger rolls. Avocado on anything tastes good to me so a Grilled Chicken, Bacon & Avocado Burger it was.

Horizontally slice the chicken breast into thin slices and pop in a pan (or on the barbecue) with bacon and a drizzle of olive oil, salt and pepper.

Toast the bun halves and top with cheese and pop under the grill to melt.

Prepare your salad ingredients. I didn’t want to overload the salad ingredients or else I wouldn’t be able to get my mouth around the burger (I had enough trouble as it was) so I opted for just lettuce, tomato and avocado.

Top the burger bun half with the grilled chicken and bacon then top with the salad. I spread the top burger bun with a little mayo and smothered the chicken and bacon with barbecue sauce.

These were good and so, so filling. Dinner that night was only very light. It’s nice to be able to prepare something like this on the odd occasion, when you’ve got the time to enjoy it without interruption. It saves you running to the takeaway for a burger which I never do anyway. If I had to make these with the kids around one would have just cheese and the other would probably just have chicken, bacon and cheese. Sometimes I feel my kitchen is like a fast food joint and I’m a short order cook, taking everyone’s orders. That’s why I save meals like this when they’re not around.

Grilled Chicken, Bacon & Avocado Burger

  • chicken breast, sliced thinly horizontally
  • bacon
  • olive oil for frying
  • cheese
  • burger buns
  • lettuce
  • tomato
  • avocado
  • mayo
  • barbecue sauce (or sauce of your liking)
  1. Fry chicken breast and bacon in a little olive oil with salt and pepper.
  2. Split burger buns, toast and top one half with cheese and melt.
  3. Assemble burger with bun half which was topped with cheese, then chicken, bacon, sauce, lettuce, tomato and avocado with the top half of the bun spread with mayo.

Aussie Works Burger

I consider myself very lucky to have grown up in a time when there wasn’t a ‘Golden Arches’ on every street corner and my dear Mother used to cook everything from scratch and takeaway was a very rare treat. One such treat was a good old fashioned hamburger with the lot, or, as us Aussies like to call it, an “Aussie Works Burger”. But I prefer to cook them at home, just the way I like them.
It still happens to be one of my favourite takeaway options if I’m ever out and about and short on time or won’t be home. It beats any burger chain hamburger hands down and that’s why I don’t eat them. They don’t even come close to tasting like a real hamburger. There are a lot of variations of the good old Aussie Works Burger. Some fancy cafes like to jazz it up a bit with things like ‘Wagyu beef’, for instance, or ‘caramelised onion jam’ which is all just too fancy schmancy (and very overpriced) and not at all necessary.  With some basic pantry supplies that we all have, you can easily recreate your own burger at home.
It starts with your basic hamburger bun. I usually have a supply in the freezer for a quick weekend meal. You can choose white, wholemeal or wholegrain bread rolls or even sliced bread for that matter. The buns are split and lightly toasted under the griller (broiler).
Next step is the meat. I usually use ground beef and add nothing but salt and pepper. If the meat is a little too crumbly, you can add a beaten egg to bind. I just form the meat into patties and fry on a pan until cooked. You can substitute the beef for any ground meat or use a thin piece of steak.
Bacon and sliced onions are then cooked in the same pan while the beef patties are kept warm in the oven. 
Next, fry an egg, in the same pan to your liking. (I usually omit this for myself as I’m not a big fan of eggs.)
While the pattie, bacon, onions and egg are cooking, return one half of the bun to the griller with a couple slices of cheddar cheese and melt. You are pretty much now ready to assemble the burger.
Some people might have different ways of assembling it but I always prefer to have the salad on the bottom. Start with lettuce, sliced tomato (add a sprinkling of salt and pepper to the tomato), sliced beetroot (sliced, canned beetroot is HUGE in Australia – we couldn’t imagine a burger without it), a slice of fresh or canned pineapple then add the hot items.

Add the meat patty, egg, bacon and cooked onions and lather with your choice of sauce.  In my case, it’s always barbecue (or similarly known as HP Sauce) sauce. Tomato sauce, or ketchup, is the other most common sauce added to our burgers.
Top with the other half of the bun which has the melted cheese and you’re done. Now, the biggest problem you have is how you’re going to get your mouth around it. Good luck! You’ll need a bath after eating it as the sauce will ooze out but it will be worth it. A typical Aussie favourite that is best recreated at home.

  • hamburger bun (one per person)
  • ground meat (beef, chicken, pork, veal, lamb)
  • bacon rashers
  • onion, thinly sliced
  • eggs
  • cheddar cheese, sliced
  • lettuce
  • tomato
  • beetroot, sliced
  • pineapple, fresh or canned, sliced
  • sauce of your choice, barbecue or tomato
  • oil for frying
  • salt and pepper

  1. Toast buns until lightly golden.
  2. Lightly season your ground meat with salt and pepper and form into patties. Fry until cooked through.
  3. Fry bacon rashers, thinly sliced onions and eggs.
  4. Return one half of the hamburger bun to the griller and add sliced cheese and melt.
  5. Assemble the burger with lettuce, tomato, beetroot, pineapple, meat pattie, bacon, egg, sliced onions and sauce.

Blackened Fish Burger with Coriander Lime Mayo

 

I do love a cooking challenge and when I saw Jutta from Hungry Little Girl was starting the New Year off with one, I decided to join up. By signing up, I am given a ‘secret’ blogger to stalk check out and cook one of their recipes and then blog about it with all recipes linking up over at the Hungry Little Girl web site on the 20th of each month. I can’t wait to find out who was allocated me and which of my recipes they cooked.

Anyway, my partner was Bobbi from Bobbi’s Kozy Kitchen. Bobbi has an amazing story. She was raised by a Mum who cooked ordinary meals and she didn’t really learn to cook anything too interesting herself. After having a gastric bypass operation she decided to try and learn to create fresh, healthy meals that relied upon natural ingredients and nothing from a packet or jar (my kind of girl).

 

I had a fun time looking through all her recipes and I had about half a dozen I wanted to try. I originally had planned the Cheesy Poblano Chicken but its been so hot here in Queensland, I decided to have something that didn’t require too much effort or generate too much heat in the kitchen. (This one is on my saved list to try come winter time.)

 
Bobbi recreates famous celebrity chef’s meals and this Blackened Tilapia Sandwich with Cilantro Lime Mayonnaise originally by Paula Dean was going to be just perfect for lunch. I made a couple changes because I didn’t have a few of the ingredients but it was just delicious. 
 
 
I’m not really sure what type of fish tilapia is and if we can even get it here in Australia but I just used a frozen  basa fillet I had. I didn’t have onion or garlic powder either so substituted with fresh. I didn’t have a dry spice to cook the fish in but rather a wet mix which I spread on the fish

while cooking. I was going to use Greek yoghurt instead of mayonnaise in the coriander mayo but already had it mixed before I remembered. This is definitely something I’ll cook again. It was really filling and delicious and a great meal for a warm day. I can’t wait to try some of Bobbi’s other recipes. It was great getting to know you Bobbi! What an inspiration you are.

 
Blackened Fish Burger with Coriander Mayo
 
  • 1 white fish fillet
  • 1 bread roll (I used focaccia)
  • 2 tbs sweet paprika
  • 1 tbs ground thyme
  • 1 tsp finely diced onion
  • 1 tsp crushed garlic
  • 1/2 tsp salt
  • chilli to taste
  • olive oil for frying
  • salad greens
  • mango salsa (diced fresh mango and store bought Mexican tomato salsa)
  • 2 tbs mayonnaise
  • 1 tbs finely chopped coriander
  • 1 tsp lime juice

 

 
 
 
  1. Combine paprika, dried thyme, diced onion, crushed garlic, salt and chilli in a mortar and pestle (or blender) and grind to form a paste.
  2. Heat oil in pan and once hot, place fish fillet in pan and spread with spice paste. After 3 minutes, turn fish and repeat with remaining spice blend.
  3. Mix mayonnaise, coriander and lime.
  4. Toast bun and spread with coriander mayonnaise and add salad greens.
  5. Top with fish and mango salsa.
Serves 1. Multiply quantities depending on number of people you are serving.
 
Here’s a quick tip. When dicing mango, cut ‘cheeks’ of mango and slice horizontally and vertically into mango cheek while skin is still intact. Turn skin ‘inside out’ and remove flesh straight into a bowl.
