I've been blogging since January this year and have made quite a few recipes since then. One, which has received the most hits out of all my posts, is the No bake Chocolate Peppermint Slice. It's so delicious and so super easy. I think it's always going to be hard for me to share recipes with my friends overseas as we're always going to be in opposite seasons. This slice recipe is a real winner for hot weather. No need to put the oven on at all. I'll probably be revisiting some of my other 'summer' recipes once things start to warm up around here.
No Bake Chocolate Peppermint Slice
Base:
250gm plain biscuits
125gm butter, melted
1/2 cup coconut
2 tbs cocoa
Peppermint filling:
1.1/2 cups icing sugar
125gm butter, softened
1.1/2 tsp peppermint essence
couple drops of green food colouring
Chocolate topping:
200gm chocolate, melted
2 tbs butter, melted

Base:

Chocolate topping:
200gm chocolate, melted
2 tbs butter, melted

Break biscuits into crumbs using either a food processor or placing in a plastic bag and beating with a rolling pin.

Add cocoa, coconut and melted butter. Press into slice pan and refrigerate.

Beat icing sugar and butter until smooth. Add peppermint essence and green food colouring. Spread over refrigerated biscuit base and return to refrigerator.
Coles Supermarket have their own homebrand Peppermint Chocolate which, they claim, is Belgian chocolate and for less than $2 for 200gm, it's really quite nice. It is milk chocolate too, unlike most peppermint chocolate being dark and it is filled with tiny green crispy chunks of peppermint. Bit like a Peppermint Crisp. Melt chocolate and butter and smooth over refrigerated base and peppermint filling. Return to refrigerator until chocolate has set. Store in refrigerator.

ReplyDeleteThis sounds lovely Anne. The only difficulty I have is converting the cup measurements. Not only am I on the other side of the water but I also think in lb and oz :( I will give it a go though, the children would love it!

This is brilliant. My dad loves choc mint slice, but my mothers recipe has you melting the icing sugar over the stove, then trying to pour it onto the base before it cools - painstaking and way too hot to do in summer. This is a great alternative, much easier but still as delicious. Thank you

ReplyDeleteDon't think we get Coles peppermint chocolate in the UK, so going to break mint matchamkers into cooking chocolate for same effect, and maybe top each slice with a white chocolate jazzies button(with sprinkles)to make more Christmassy
