Make your own toasted muesli/clusters

I’ve not been much of a breakfast person since the kids came along. Always putting them first and by the time I’ve got them fed, dressed and out the door, I’d long forgotten about feeding me, wondering why I’m starving at 10am. I know I could get up a little earlier but those extra 30 minutes sleep in in the morning do wonders for me. I have, however, started to get back to eating breakfast and do enjoy a nice toasted muesli or muesli cluster. There are some nice ones in the supermarket these days. Toasted with hazelnuts, cashews, macadamias, walnuts, dried fruit, etc etc and for about $6 for 300grams, quite expensive. Its not that hard to make it at home yourself.

I’m lucky that I try to keep a well stock pantry and always have nuts and seeds of some kind in store. Things like peanuts, macadamias, pepitas (pumpkin seeds), sesame seeds, LSA (linseed sunflower almond mix) have gone into this lot along with coconut, rolled oats and some quinoa flakes. (You can add dried fruit of any kind as well. Its just that I prefer a nut mix.) Its just a matter of using what you’ve got on hand.

You then pour honey, golden syrup, maple syrup or any other kind of syrup over the mix and lightly toss it, ensuring you spread it back over the pan again before popping in the oven. For a full tray of muesli mix, I usually use about 1/2 cup of honey.  Heat in a 175 deg C oven for approximately 10 minutes. You should really watch it closely so it doesn’t burn. Remove from the oven and allow to cool. You’ll notice clumps have formed. Try not to mix it up too much or the clumps will break up. Store in a sealed container. I like to have mine sprinkled over plain yoghurt with a grated apple or chopped banana. Yum. I could go for some now.
