Spicy Baked Fish with Mango Salsa

I tell you, I’ve been stretched to the limit this week with my challenge to use only what I have in the fridge, freezer and pantry for my Gourmet Garden Blog Off / Cook Off. Tonight’s effort was no exception. I found two fillets of frozen fish and two mango cheeks in the freezer. I’m not even sure what I used the mango for. (One fish fillet for me, the other for homemade fish fingers for the kids.)

I usually make a dry spice rub for fish, chicken or beef for frying, grilling or barbecuing and decided to try a ‘wet’ rub on my fish and make a salsa to go with it with the few salad ingredients I had.

Spicy Baked Fish with Mango Salsa

  • fish fillets

Rub:

  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • salt & pepper
  • 1/2 tsp sweet paprika
  • 1 tsp Gourmet Garden thyme (or 1/2 tsp dried thyme)
  • 1 tsp Gourmet Garden chilli (or 1/2 tsp chilli powder)
  • 1 tsp Gourmet Garden garlic (or 1/2 tsp garlic powder)

Salsa:

  • mango flesh, finely diced
  • red capsicum, finely diced
  • red onion, finely diced
  • 1 tbs Garden Gourmet coriander (or half a bunch of fresh coriander leaves)
  • 1 tsp Garden Gourmet garlic (or 2 cloves of garlic, crushed)
  • 1 tsp Garden Gourmet chilli (or 1 tbs chilli sauce or 1/2 tsp chilli powder, to taste)
  1. Mix together rub ingredients.
  2. Spread on top of fish fillet and place on a baking paper lined oven tray. Cover with foil.
  3. Bake in a 170 deg C oven for approx 15 mins.
  4. Mix together salsa ingredients and serve with fish.
  5. Serve fish on a bed of rice or a side of salad and fries.
