It was all about baking Christmas presents for teachers this year and I thanked my daughter's teachers with Pistachio & Cranberry Biscotti and for my son's Kindergarten teachers it was White Chocolate & Macadamia Cookies. I think it's always nice to do something a little more decadent than normal and something they ordinarily wouldn't buy for themselves. (They're probably hating me right now due to the over indulgence. They're all very healthy and slim.)
This recipe is based on one from a dear Tasmanian friend of mine. It's her quick mix Choc Chip Cookies which I've replaced the dark chocolate chunks with white chocolate and roughly chopped macadamias added.
White Chocolate & Macadamia Cookies
3/4 cup brown sugar
1/2 cup caster sugar
1 1/2 cup self raising flour
1/2 cup plain flour
185g butter, melted
1 egg
2 tsp vanilla
100gm white chocolate, roughly chopped

1/2 cup macadamia nuts, roughly chopped
Preheat oven to 160 deg C. Mix dry ingredients. Mix wet ingredients. Mix together. Bake for approx 15 mins or until golden.

I packed all the cookies I gave as gifts in plastic lined 'coffee bags with window' which I picked up on ebay for next to nothing. For the Kindergarten teachers, I also added a $5 coffee shop voucher which I presented in a "thanks a latte" envelope, a copy of the recipe and a greeting card with personally handwritten heartfelt thanks. (They really needed it after a year with my son!) I popped all that into a cellophane bag, trimmed with tinsel and a Christmas decoration.
White Chocolate Macadamia Cookies are the best!! I've never made them but I buy them for a treat sometimes! I'm afraid if I made them I would eat the whole batch!
