Savoury stuffed meatloaf

I love using up leftovers and making something from nothing. I guess it’s how we get by but I also love my food and try to make it as tasty as possible. I can’t remember if I saw this in a magazine or something similar on the TV but it worked with what I had on hand.

It’s basically a handful of whatever ground meat you have (I used beef), 2 cups of cooked rice, a few other seasonings and flavours and then a layer of bacon and whatever else you like in between. Top with tomato sauce (ketchup), bake covered in the oven and served warm sliced with vegetables or salad or serve cold on sandwiches or in a picnic lunch with dill pickles, cheese, pickled onions and bread.

Savoury Stuffed Meatloaf

250gm (8 oz) beef mince (ground beef or any other ground meat)
2 cups cooked rice
1 tbs dried herbs of your choice (I used basil and oregano)
1 medium onion, finely chopped
2 eggs, beaten
tomato sauce (ketchup)

Filling:
2-3 bacon rashers
strips of roasted vegetables, eg capsicum (peppers), zucchini (courgettes/squash), artichokes, etc
olives, cheese, chutney, relish, chopped boiled eggs, anything you like

  1. Combine beef mince with rice, dried herbs, onion and beaten eggs.
  2. Place 1/2 mixture into a small baking dish or loaf pan.
  3. Lay filling ingredients on top and place remaining mince mixture into dish.
  4. Top with tomato sauce (ketchup) and cover with aluminium foil.
  5. Bake for 30 minutes in a 180 deg C (350 deg F), remove alfoil and return to oven for 10 minutes.
  6. Slice and serve or allow to cool and serve cold with chutney or relish.

You might be wondering why my picture doesn’t look like it contains any of those lovely Mediterranean flavours and that’s because it doesn’t. My family doesn’t eat anything like that, only me so I was dreaming that it was in there. It did have bacon but if I had my way……..

Try this with pork mince and apple, cooked cabbage, carraway seeds or chicken mince, capsicum (peppers), fresh coriander (cilantro), corn, tomatoes and Mexican flavours. Great way to use up leftovers and experience a few different flavours.
