When I first saw this recipe from Miz Helen, I was salivating so much. I knew I had to bookmark it and put it away for summer. I stumbled across it again and I just knew I had to try it. I didn’t have ribs, like she had used so chicken legs would have to do. Even typing about it now is making my mouth water. It really was good and it will definitely be used a lot this Spring and Summer. Thank you Miz Helen for a wonderful recipe!
Miz Helen’s BBQ Rub & Marinade
Rub:
2 tsp brown sugar
2 tsp paprika
2 tsp garlic powder
2 tsp dry mustard (I didn’t have any so omitted)
1/2 tsp dried coriander
1/2 tsp cumin
1/2 tsp chilli powder
1.1/2 tsp dried thyme
1 tsp salt
1 tsp black pepper (can be reduced according to taste)
1/4 tsp cayenne (I omitted as husband doesn’t like things too spicy)
Rub meat with dry rub mix and leave to marinate for at least 30 minutes. I didn’t have that much time and they still came out lovely.
Sauce:
1 medium onion, chopped finely
3 cloves garlic, crushed
1 cup ketchup/tomato sauce
1/4 cup vinegar
1/4 cup Worcestershire sauce
1/2 cup honey
1 tsp salt
1 tsp pepper (can be reduced according to taste)
1/8 tsp cayenne (I omitted as husband doesn’t like things too spicy)
Once meat is cooked, pour over sauce to serve.
