It’s not like my kids were going to be without chocolate this Easter morning but I couldn’t resist treating them both with an Easter egg filled with vanilla ice cream and mango puree to resemble a real egg. I was inspired by this beautiful cheesecake and passionfruit filled chocolate egg by Raspberri Cupcakes.
My photos are nowhere near as nice as hers but the kids thoroughly enjoyed their Easter ‘eve’ treat for movie night.
Ice Cream filled Chocolate Easter Egg

chocolate Easter egg
-
vanilla ice cream
-
mango, pureed
-
wafers
-
marshmallows
-
Carefully slice off top of Easter egg and place in suitable bowl so it can stand up.

Fill with slightly softened vanilla ice cream creating an indent in the top to hold the mango sauce.

Serve with wafers cut into strips to resemble toast ‘soldiers’ and a side of marshmallows.

Oh Anne I LOVE LOVE LOVE this. But where do you get hollow chocolate eggs like that? I mean in the boxes the eggs come in does it say its hollow inside. This is just the cleverest idea and I love what you did with it. I'm going to hit the stores after easter just to find some hollow eggs to try this. It is so neat. Thanks for sharing.
