We only had about one third of the pineapple left that I got in my fruit box so there went all the wonderful ideas I had for using it up. We just sliced it and ate it like that. It was so juicy and sweet. I decided to juice the rest of it up in my fancy, whizz bang juicer (which I hate getting out, using, then having to clean) along with 3 oranges. This is what was left behind.

Just the pulp from the oranges and the peeled pineapple. (Notice I lined the container with a plastic bag? Helps a little with the cleaning process.) I put on the stove 2 cups of sugar and 2 cups of water to dissolve and added this pulp. Once the sugar was dissolved, I turned off the heat and allowed the fruit pulp to infuse the water. I also added a passionfruit that my neighbour had given me from her vine.


Once cooled, pass through a strainer and store in a bottle. You could line the strainer with muslin or a clean Chux cloth to remove any sediment. I topped up the bottle with the juice I made to make up 1 litre. To serve, dilute one part cordial with about 8 parts water or to taste.
