Don’t get me started on that place beginning with “Mc”. I can’t stand them but sometimes they’re a necessary evil. I despise their food. I can’t complain about the service because there is none and the stores near us are a little run down. When we were on vacation in December last year, it came in pretty handy. It was around the corner and in between rainy periods, it was great to take the kids to the undercover playground and to have a 50 cent ice cream and sometimes breakfast.

I admit to liking their hotcakes (it’s about the only thing) and I came across this recipe in Flo Bjelke Petersen’s cookbook “Classic Country Collection” for pikelets but they’re nothing like the pikelets I’m used it. This recipe, to me, was exactly like “Mc” hotcakes.
I usually have a bulk pancake mix in the pantry, ready to go, but when I don’t this is the recipe I go for and the kids love them, even the fussiest one. We had to have a batch of them over the weekend.
Hotcake Copycat Recipe
(from Flo Bjielke-Petersen’s “Classic Country Collection” pikelet recipe)
- 1 cup milk
- 1/2 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 1 cup self raising flour
- 1/2 tsp bicarb soda
- 1 tbs butter, melted
- Beat milk, sugar, egg and vanilla in a bowl.
- Add sifted flour and bicarb soda, fold in to milk mixture, then add melted butter.
- Mixture should be fairly liquid.
- Heat pan and spray with oil or spread with butter.
- Spoon (or pour from a small jug) mixture into pan in small round circles and turn when bubbles have completely formed on top.

I'm with you on the Mc place – awful but sometimes a necessary evil! These look super good. I always have premade mix too but I'm trying to get into the habit of making them from scratch on the weekend. Always a hit, esp with bacon! 🙂
Oh I so agree with you on the Mc!! That place give me the shudders but we do occasionally go there. Those pancakes look delicious and I haven't had breakfast yet…so now my stomach is growling…LOL! Was it really your birthday yesterday or did I "sing" you happy birthday and leave you confused?
these look awesome, I love pancakes, in fact one of our sunday brunch treats is american pancakes with bacon and syrup. Will have to give these a go.
Never had Mc pancakes. But I do like their breakfast burritos. With their mild or hot salsa. For $1 anywhere in the US it really isn't bad. Especially when you're traveling. Thanks for this recipe Anne. I'll try it. One question though. Is Bicarbanate Soda the same thing as our 'baking soda?' I presume it is. As you cute Aussies say 'I'll give it a go.' Pikelets/hotcakes are a great old standby for visitors and kids. Loved your birthday cake. AND you are so right.. it is all about the kids when birthdays come around. The prettier cake will win every time. So glad you have a great time with your Mum.

I actually grew up with the crepe style ones – every Friday night for dinner…it's a Norwegian thing. I love rolling them up.
But for lunch, I think these ones will be perfect!

It is very similar to my favourite recipe. I use same ratios of milk to flour too 1C for 1C if I want to make a smaller quantity.
