I love this easy recipe for Honey Oat Bars.
You know that sinking feeling you get, when you’re all set for baking and you’ve run out of a vital ingredient like self raising flour (cake flour)? Well, that happened to me when I was all set to make cookies and I had to change it up pretty quickly and get something baked, in a hurry, for my starving crew.
I found a recipe for Muesli Cookies and because things had already turned sour for me, the cookies weren’t rolling very well into balls so I pressed the cookie dough into a slice pan and came up with these Honey Oat Bars.
The kids didn’t seemed to mind that they were in a square shape and not round cookies. Making a slice is so much easier sometimes when you’re in a hurry anyway.
This recipe is very similar to the good old Aussie favourite, Anzac biscuits, but with honey instead of golden syrup and, just for good measure, I added the last of the chocolate chips to this batch.
You could add just about anything like chopped dried fruit, nuts, top with icing or whatever. These will become a new favourite in our household. It’s amazing how new recipes are found under such stressful conditions!
Easy Honey Oat Bars
A delicious treat for lunch boxes or snacks. This melt and mix recipe using common ingredients from your pantry produces a much nicer bar than what you can buy in the supermarket.
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 18 pieces
Ingredients
- 1 cup oatmeal (rolled oats)
- 1/2 cup plain flour
- 1/2 cup coconut
- 1/4 cup sugar
- 1/8 cup honey or syrup
- 90 grams butter or margarine
- 1/4 tsp bicarb soda
- 1/4 cup chocolate chips (optional)
Instructions

Preheat oven to 170 deg C.

Place honey and butter in a small saucepan and melt over low heat.

Add bicarb soda and stir.

Place remaining ingredients into a bowl and mix together.

Add liquid ingredients to dry ingredients and combine thoroughly.

Press into a slice pan (28x18cm) and bake until brown.
Recipe Notes
Add nuts, dried fruit, chocolate chips, sprinkles and any other of your favourite ingredients.

The ingredients you listed are the same as Anzacs ( minus the choc chips )
