Call me slack or just plain exhausted but I’d gotten into some bad habits of late. I seemed to have more time on my hands for making things from scratch when the children were quite young. As they’ve got older time hasn’t been on my side and I’ve resorted to buying ready-made a bit more from the supermarket and I cringe every time I do. One item, in particular, is frozen potato wedges. Like seriously? How easy are these to do at home? I’m on a mission this year to get back to making from scratch so I wanted to share these seasoned potato wedges using regular spices most people would have in their pantries.
I made up a fair bit of the seasoning to keep in the pantry so it’s ready to go. In my seasoning I used salt, pepper, garlic powder, paprika, thyme, cumin and ground coriander. You could add a little chili powder to spice things up. Even salt, pepper and garlic powder on it’s own is enough to give your potato wedges a bit of extra flavour.
I don’t even peel the potatoes if they’ve been washed. I like to get the cooking process started by steaming my potato wedges in a microwave proof bowl in the microwave for a couple minutes. This is how I do my roast potatoes too. Just slice the potato into wedges, pop in the container and, depending on how many potatoes you have, microwave. For about 3 potatoes I cook on high for about 3 minutes.
Once par cooked, add a slurp of olive oil and add a tablespoon of the seasoning and shake around until potatoes are well coated.
Spread out onto a baking sheet and bake in a 170 deg C oven for approximately 25 minutes or until potatoes are cooked.
And what you have is a tasty, crunchy, seasoned potato wedge. Even ‘the fussy daughter’ likes these. I can’t get her to eat mashed potato so we eat a lot of wedges.  At around $4 to $5 for less than a kilo of frozen wedges from the supermarket, I can get a couple of kilos of potatoes for around the same price for quite a few meals PLUS I won’t have to worry about these ingredients that were on the packet of the store bought wedges.

Homemade Seasoned Potato Wedges
  • potatoes, cut into wedges
  • olive oil

Seasoning:
  • 1 tbs salt
  • 1/2 tbs pepper
  • 1 tbs garlic powder
  • 1 tbs paprika
  • 1 tbs thyme
  • 1 tbs cumin
  • 1 tbs ground coriander
  • or seasoning of your choice

  1. Preheat oven to 170 deg C.
  2. Par cooked potato wedges in microwave proof dish (approx 1 minute per potato).
  3. Once cooked, add a slurp of olive oil and 1 tbs of seasoning and shake to coat.
  4. Place seasoned wedges on a baking sheet and bake for approx 25 minutes or until potato is tender.
  5. Serve as a side to a main meal or serve with sour cream and sweet chilli sauce for a snack.
