This is one of those mid week meals that is so easy to throw together and great for the whole family (except my extremely fussy nearly 7 year old daughter). You can use any type of noodle. I used hokkien noodles in this instance. You can also use any vegetables you like, especially if you’ve got cabbage. Cabbage goes great in a chow mein.

Easy Beef Chow Mein

beef strips (I used rump steak)
medium onion, chopped
1 tbs oil
2 garlic cloves, crushed
chopped vegetables (eg cabbage, carrot, capsicum, peas, bean sprouts)
1 tbs plain flour
1 tsp curry powder
1 cup beef stock
noodles (I used hokkien)
2 tbs soy sauce
1/4 cup oyster sauce

  1. Heat oil in a frying pan over medium-high heat. Add onion and garlic. Cook, stirring, for 3 minutes or until onion has softened. Add beef. Cook for 8 to 10 minutes or until browned and cooked through.
  2. Add vegetables. Cook, stirring for 5 minutes. Add flour. Cook, stirring, for 1 minute. Stir in stock. Season with pepper. Bring to the boil. Reduce heat to medium-low. Simmer, stirring occasionally, for 10 minutes or until sauce thickens slightly.
  3. Meanwhile, prepare noodles as per instructions. Drain.
  4. Add  soy sauce and oyster sauce. Cook, stirring occasionally, for 3 minutes. Add noodles. Toss to combine. Serve.
