I had a window of time yesterday and it was an absolute stinker so didn’t feel like putting the oven on. I remember recently pinning this gorgeous recipe for Peanut Butter Oatmeal Butterscotch Chip Cookie Dough Balls (phew!). I adapted the recipe to make Choc Chip Oat Balls had them made in no time and ready for when the kids came home from school.
Cookie dough isn’t as big over here in Australia but it should be. These balls had a bit of nice raw cookie dough taste while tasting of peanuts, honey and oats, plus the chocolate chips of course.
I did manage to find a handful of the butterscotch chips which were in the original recipe so I used them. You could use any type of chocolate chips.
I don’t think these have too much ‘bad’ stuff in them. Certainly no egg or dairy. Great for a quick energy boost during the day or to see you through the evening hour.
Choc Chip Oat Balls
(From the recipe at Bake Your Day)
- 1/2 cup plain flour
- 1.1/4 cup rolled oats
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup crunchy peanut butter
- 1/3 cup maple syrup
- 1/4 cup apple sauce (available in a jar from the supermarket or make your own)
- 1 tbs honey
- 2 tsp vanilla extract
- 1/4 cup butterscotch chips (or any type of chocolate chip)
- In a bowl add flour, oats, cinnamon and salt.
- In another bowl mix peanut butter, maple syrup, apple sauce, honey and vanilla.
- Add to flour mixture and stir through chocolate chips.
- Using a small ice cream scoop, take spoonfuls of mixture and roll into balls.
- Pop on a baking sheet lined with baking paper and refrigerate until required.

I love the sound of these delicious treats, and they have lots of wholesome ingredients too. Not only are they perfect for the hot weather, they would be fun to make with the kids as well.

We are celebrating Passover now (during this time we don't eat anything with wheat), so I'm saving the recipe for later use.
