I have to admit this isn’t my idea but I saw it pop up in my Facebook feed probably a couple years ago and it’s just one of those things that hasn’t gone away. Having a small family that eat like sparrows, making a big pavlova is just a waste of time because you know who’s going to eat it all? Yes, that’s right. Me! I don’t even make big cakes much anymore rather opting for individual mini loaves, cupcakes or muffins because I can put them all in the freezer and only take out what I need. My supply usually lasts for months. Anyway, with Australia Day just around the corner, the microwave meringue idea popped back into my head and I decided to give it a try. I’m sad I didn’t try it earlier because it’s bloody marvellous!

Pavlova is a very traditional Australian dessert. We’ve claimed it as our own but it was in fact created in New Zealand for the famous ballerina, Anna Pavlov back in the 1920’s. Exactly which country has right to the claim still isn’t 100% clear but nonetheless, it’s a really special dessert for us Australians and now made even easier with this microwave recipe.

I can’t give credit to the person I saw who posted that video but I Googled it again and there are a few people who’ve cottoned on to the idea now and have posted recipes. If you don’t believe me that it would work, you really have to give it a try. It’s so, so easy and the pavs turn out fantastic.

You can keep them whole or crush to use in an Eton’s Mess type dessert. I did both. My son devoured it all crushed up mixed with whipped cream and fresh, seasonal mangoes. (Probably a better way of eating it for him.) The adults in the house were a little more refined and enjoyed them with the whipped cream and fruit piled high on top.

It’s hard to believe just one, yes just one egg white and 300 grams of icing sugar can product 6 beautiful large round individual pavlovas from the microwave. It’s like watching a science experiment happen right before your eyes. Check out the video below. (It’s not the most clear but you can get a general idea.)

 

If you’re taking a plate to an Australia Day function, these pavs will be ready by the time your partner has loaded the kids and the bags into the car. Top with your choice of whipped cream, fresh seasonal summer fruit and/or chopped nuts.
