You’ll have to excuse my lack of recipe posting. You see, I put my mobile phone (and only camera in the house, other than my kid’s iPod and iPad which are at their Dad’s) in to be fixed just after we got back from our week away mid December and I haven’t had a camera to take any pictures. Count all the public holidays over the Christmas break plus businesses closing down and I’m still waiting for it to be fixed. I’m hoping I get the call that my phone is fixed tomorrow but let’s not hold our breath.
Being summer here, I’ve been making a lot of salads and been finding a lot of inspiration on Pinterest. You can make salads out of just about anything and I’ve been using a lot of different http://www.naturalmedicine.com/members/paulsen/profile/ seasonal vegetables just to add a bit of interest. These are a few that I’ve made these last few weeks and for Christmas dinner. I’ll post the photos and links from where I got these recipes. If you don’t have the vegetable or particular vinegar, just use what you have. Add a protein for a complete meal or use as a side. If you don’t have pumpkin, use sweet potato. If you don’t have feta, use ricotta. Always substitute with what you have. They’ll always taste good.

Yummy – I am doing more variety in my salads – my kids were a bit surprised with the strawberries the other day. But it is all good.
