When my 6 year old son asks “what’s for dessert Mummy?” and we’ve just had a roast chicken dinner, who am I to just give him plain vanilla ice cream for dessert? Right? That would just be cruel. I had to satiate this poor little guy’s appetite with a nice tummy warming pudding but couldn’t be bothered mixing and baking a full size pudding. (And besides, I would just eat the bloomin’ lot!)
You’ve all seen the recipe for the chocolate cake in a mug? Well, this is an actual self saucing pudding. A quick search and I found a recipe for this 30 second pudding in a mug. I’m not sure if its a help or a hindrance. I certainly don’t need to know any 30 second recipes for rich chocolate gooeyness. But as a public service, I’m here to share it with you, my lovely readers. You’re welcome!
I used your regular sized coffee mug to allow for mixing and spluttering in the microwave. Its so, so easy. Just a matter of spooning in flour, cocoa, sugar and milk. Topping with a sprinkling of cocoa and brown sugar and then some hot water. Zap in the microwave for 30 seconds (although mine needed 40 seconds) and tip out into a bowl. The sauce is sitting at the bottom of the cup.
As you can see in the top photo, I served my son’s in a bowl with a few banana chips. Me? I couldn’t wait. I just spooned ice cream into the mug. Your dessert dilemma is sorted.
30 second Self Saucing Chocolate Pudding in a Mug
(adapted by recipe found here)
- 1 heaped tablespoon self raising flour
- 1 heaped tablespoon cocoa
- 1 heaped tablespoon sugar
- 1 and a half tablespoons milk
Topping:
- 1/2 tablespoon cocoa
- 1 tablespoon brown sugar
- 1 tablespoon hot water
- Mix together self raising flour, cocoa, sugar and milk in a coffee mug (or other small microwave proof jug).
- Sprinkle on top extra cocoa and brown sugar and carefully pour on hot water.
- Cook in microwave for 30 seconds. (Mixture should be combined and cooked. If undissolved cocoa exists, zap for an extra 10 seconds.)
- Pour into a bowl or add ice cream or cream to the cup.

I was just wondering whether there would be a variation of some sort using plain flour and without baking powder. I tried making this with just plain flour but using the same measurements it did not turn out very well!! Thanks. P.s. I'm a poor uni student who is desperate for some chocolate!! Haha
Hey Ruby! Thanks for your query. Here is a recipe to make your own baking powder but you'll need bicarb soda, cream of tartar and cornflour and I'm assuming if you haven't got baking powder you may not have these things. http://www.food.com/recipe/make-your-own-baking-powder-clone-substitute-38711

Another option for plain flour. Add egg white. Whisk it to soft peaks. Fold into mix wnd it gives the pudding the lift it needs

I was so excited about making this recipe. The first,attempt didn't work so I thought mustve read it . So I tried again . Again didn't work 🙁 nice sauce on top and dry Claggy mix underneath. Hi M.Bedir. Thanks for your query. Not quite sure what could've gone wrong but if you ensure you just mix the SR flour, sugar, milk and cocoa together first (not too much though) and then carefully sprinkle the extra cocoa, brown sugar and hot water on top, it should work. It is very moist or 'fudgey' and unlike regular cake. I hope you give it another try and some success. Thanks for letting me know. Anne xx
The thing I found hardest about this recipe was scooping the ice cream out of the tub, because it was so quick and easy to make the ice cream didn't have enough time to soften! 🙂 Thanks so much for sharing this delicious recipe!

Hi Louise. I’m so sorry it didn’t work for you. One thing I thought of when others said they didn’t like it or it didn’t turn out was that microwaves differ with their cooking power and sometimes the cocoa might get burnt. Reducing the power or cooking in short bursts might help. Thanks for letting me know anyway.

I literally found this recipe about five minutes ago and I have already made and eaten this pudding! It was SO yummy. I swapped white sugar for coconut sugar, and chucked some strawberries on top, and it was utter perfection! I already want to make it again.
Hubby said, "you know what would be really nice right now? Chocolate pudding."
Google yielded this, minutes later he was eating it. Said it was great, and was very surprised by how fat it was.
I'm leaving the ingredients in the bench because state of origin starts soon and he wants another then. And every time they score a try..or kick the ball..

Tonight I was desperate for a chocolate fix. I've been eating healthy all day, went to the gym and everything. Came home, had healthy dinner, then it hit me. GIVE ME CHOCOLATE!!!!!!! No chocolate in the house due to the healthy eating plan, but, I did have all the ingredients in my making basket to make this! It was delicious! I put chocolate sprinkles on top. So good. Really chocolatey. Really hit the spot! Now I just need a bigger cup to double the recipe! Thank you!! 😀

I never trust recipes with comments that say “this ‘looks’ like a yummy recipe” or “this ‘would’ be a perfect recipe”. It means that people comment without even trying the recipe at all.
I have just made this self saucing recipe (eating it as I write this comment). It is yummy without being too sweet. Its perfect with ice cream. It has soft fluffy middle and nice thick chocolate sauce. I used a dark chocolate cocao so its has deep dark chocolate flavour. I microwaved mine for 40 seconds and it still has small amount of cocoa-flour mixture that is not cooked in the middle – it doesnt matter much really.

PS: I just read some of the negative comments & thought I’d add- in addition to microwaves varying in power, the cup size and flour used will alter the recipe. I added a bit more liquid to my batter and topping and zapped it in 10 sec bursts until just done. I made two at once which increased the cook time quite a bit. Thanks for a great recipe!
